Caribbean Chicken Nachos
Recipe Ingredients:
| 4 | oz | (1 cup) deli roasted chicken breast, chopped |
| 2 | Tbsp | finely chopped red onion |
| 1/4 | tsp | dried thyme |
| 1/4 | tsp | ground allspice |
| 6 | cup | tortilla chips |
| 1 1/2 | cup | (6oz) shredded monterey jack cheese with jalapeno peppers |
| 1 | medium | mango, seeded, peeled and chopped, OR |
| 1 | cup | well-drained and chopped canned peach slices |
| 1 | Tbsp | chopped parsley (optional) |
Recipe Instructions:
| 1. | Preheat oven to 350F. In a small bowl toss together chicken, onion, thyme, and allspice. |
| 2. | Spread chips on an 11 or 12-inch ovenproof platter or an ungreased baking sheet. Sprinkle chicken mixture over chips. Top with cheese. Bake for 5 to 7 minutes or until cheese melts. (Or, micro-cook on 100% power (high) for 1 1/2 to 3 minutes or until cheese melts.) |
| 3. | Sprinkle with mango or peaches and parsley, if desired. Serve immediately. |
