Breakfast Burrito for One
Recipe Ingredients:
| 2 | Tbsp | finely chopped onion |
| 1 | Tbsp | finely chopped, seeded jalapeno pepper |
| 2 | eggs, lightly beaten | |
| 1/4 | cup | shredded cheddar cheese |
| 1 | 8-inch size flour tortilla | |
| 2 | Tbsp | red or green salsa |
Recipe Instructions:
| 1. | Heat saute pan over medium-high heat. Add onion and jalapeno pepper; cook and stir until softened, about 5 minutes. |
| 2. | Add eggs; cook 1-2 minutes or until soft-set. Remove from heat; add cheese and stir gently until melted. |
| 3. | Place tortilla on plate. Spoon egg mixture over tortilla. Top with salsa and roll up. Serve immediately. Yield: 1 serving |
