Corn Griddle Cakes
Recipe Ingredients:
| 1/4 | cup | flour |
| 4 | tsp | baking powder |
| 1 1/4 | cup | milk |
| 3/4 | tsp | salt |
| 2 | eggs, well beaten | |
| 1 1/2 | cup | cornmeal (sifted) |
| 2 | Tbsp | sorghum molasses |
| 1 | Tbsp | butter, melted |
Recipe Instructions:
| 1. | Mix all the dry ingredients. Add the well-beaten eggs and milk. Blend thoroughly and add butter. |
| 2. | Place on greased hot griddle and fry until the cake is covered with air bubbles. Turn and brown the other side. |
| 3. | Serve with Sorghum Molasses and butter. Yield 9 griddlecakes. |
