Squash Casserole
Recipe Ingredients:
| 2 | lbs | yellow squash |
| 1 | large | onion, sliced |
| 1 | container | (8oz) sour cream |
| 3 | eggs, beaten | |
| 1 | can | cream soup (chicken or mushroom) |
| 1 | cup | grated cheddar cheese |
| 1 | Tbsp | butter, melted |
| 1/2 | to 3/4 cup cracker crumbs | |
| salt & pepper to taste |
Recipe Instructions:
| 1. | Cook squash and onion until soft; Drain. |
| 2. | Mix beaten eggs, sour cream, soup, cheese, salt & pepper in a bowl. Add mixture to squash and onion. Pour into buttered casserole dish. |
| 3. | Mix cracker crumbs with melted butter and sprinkle over top of casserole. |
| 4. | Bake at 350F for 20 - 25 minutes, or until browned and bubbly. |
