Chicken Marsala I
Recipe Ingredients:
| 3 | lbs | chicken breast (boned) cut into 1/2 inch |
| 1 | can | chicken broth |
| 1/2 | large | onion, sliced |
| 1 | stick of butter | |
| 1/2 | cup | marsala wine (or substitute white sherry |
| 1 | jar | sliced mushrooms |
| oregano | ||
| parmesan cheese | ||
| corn starch | ||
| parsley |
Recipe Instructions:
| 1. | Take 1 stick of butter and melt it in a frying pan. A few tablespoons of peanut oil if using a Wok. Add ½ large onion sliced in rings and cook until glossy. |
| 2. | Remove onions from pan or wok and fry chicken until white. Remove chicken and add 1 can of chicken broth. Put chicken and onions in and mix together. Simmer a few minutes and add ½ cup white wine (Marsala or Sherry). Add chopped parsley. Sprinkle with oregano and add salt. Add 1 jar of sliced mushrooms. |
| 3. | Simmer – then add 4 tablespoons of cornstarch to thicken (it may need a little more to thicken). Serve over cooked noodles or rice and sprinkle with Parmesan cheese. |
