Fajita Steak Salad
Recipe Ingredients:
| 1 | Tbsp | fajita seasoning (The Spice Hunter) |
| 1/2 | tsp | salt |
| 1 | 1-lb flank steak, about 1-in. thick | |
| 2 | medium | ears corn, shucked |
| 1 | medium | sweet onion, cut in thick slices |
| 1 | large | red bell pepper, quartered |
| nonstick cooking spray | ||
| 1/3 | cup | light oil & vinegar dressing |
| 3 | Tbsp | lime juice |
| 1 | avocado, cut in chunks | |
| 1 | bag | (10 oz) cut-up hearts of romaine or 8 cups torn romaine |
| 1 | cup | lightly salted tortilla strips |
Recipe Instructions:
| 1. | Heat outdoor grill. Mix fajita seasoning and salt in small cup; rub on both sides of steak. |
| 2. | Coat corn, onion, and pepper with nonstick spray. Grill steak 5 minutes per side for medium rare. Grill corn, onion, and pepper 10 minutes or until nicely charred, turning as needed. |
| 3. | Mix dressing with lime juice. Cut onion and pepper; cut corn off cob. Toss grilled vegetables, avocado and 2 Tbsp dressing in medium bowl. |
| 4. | Thinly slice steak across the grain. Divide romaine among plates; top with vegetable mixture and steak. Drizzle salads with rest of dressing; top with tortilla strips. Serves 4 |
