Gumbo
Recipe Ingredients:
| 1 | chicken breast | |
| 3 | Tbsp | butter |
| 1/2 | cup | onion, chopped |
| 1/2 | cup | green pepper, chopped |
| 1/2 | cup | celery, chopped |
| 1 | clove | garlic (or 1/8 tsp powder) |
| 10 | oz | frozen okra or green beans |
| 16 | oz | crushed tomatoes |
| 13 | oz | canned chicken broth |
| 1 | tsp | salt |
| 1 | bay leaf | |
| 1/2 | tsp | sugar |
| 1/8 | tsp | thyme leaf |
| dash of pepper | ||
| 1/2 | lbs | shrimp |
| 1 1/3 | cup | instant rice |
Recipe Instructions:
| 1. | Cook & stir chicken in skillet with hot butter until lightly browned. Stir in onion, celery, green pepper, garlic until tender. |
| 2. | Add okra, tomatoes, broth, seasonings; bring to a boil. Reduce heat, cover & simmer 5 minutes. Stir occasionally. |
| 3. | Add shrimp; cook 5 minutes. Take out bay leaves. Stir in rice, cover, remove from heat. Let stand 5 minutes. Serve. |
