Italian Pepper Steak
Recipe Ingredients:
| 2 | peppers, 1 green & 1 red | |
| 1/2 | cup | onion, chopped |
| 2 | clove | garlic, minced |
| 3/4 | lbs | beef tenderloin or boneless beef top sirloin, sliced 1/2 - 3/4 inch thick |
| 2 | Tbsp | olive oil |
| 3/4 | cup | beef broth |
| 1/2 | tsp | dried oregano or basil, crushed |
| 2 | medium | tomatoes, diced |
Recipe Instructions:
| 1. | Cut peppers into thin strips and cook with onion and garlic in skillet with two tablespoons of olive oil on #5 heat. |
| 2. | When crisp-tender (about 4 minutes), remove vegetables and put meat in skillet. Add more oil, if necessary. Sprinkle meat lightly with salt. Cook over medium-high heat about 4 minutes on each side or until slightly pink in center. Transfer to serving platter. Keep warm. |
| 3. | Cool skillet for 1 minute. Carefully add beef broth and oregano or basil. Bring to boil and boil gently, uncovered, over medium heat 2 to 3 minutes until broth is reduced to 1/3 cup, scraping up browned bits in pan. Remove from heat. |
| 4. | Stir in cooked pepper mixture and tomatoes. Serve on platter with meat. Serves four. |
