Lemon-Basil Chicken
Recipe Ingredients:
| 1/2 | cup | fresh lemon juice |
| 1/4 | cup | olive oil |
| 1/2 | cup | chopped fresh basil |
| 3 | green onions, chopped | |
| 2 | Tbsp | white wine vinegar |
| 1/2 | tsp | freshly ground pepper |
| 4 | (6oz) bone-in chicken breasts |
Recipe Instructions:
| 1. | Whisk together lemon juice, oil, basil, onions, vinegar, and pepper in small bowl. Reserve 1/4 cup of mixture. |
| 2. | Place chicken in shallow dish or resealable plastic bag. Add lemon juice mixture. Cover or seal and chill 1 hour, turning occasionally. |
| 3. | Remove chicken; discard marinade. Grill chicken, covered with grill lid, over medium-high heat 35 to 40 minutes or until tender and no longer pink (170F), turning and basting occasionally with reserved 1/4 cup mixture. Yield: 4 servings |
