Pork Satay
Recipe Ingredients:
| 1/4 | cup | creamy peanut butter |
| 1/4 | cup | light soy sauce |
| 2 | large | cloves garlic, minced |
| 1 | Tbsp | brown sugar |
| 1 | tsp | lemon pepper |
| 2 | pork tenderloins (3/4 lb each) | |
| cooked couscous (optional) |
Recipe Instructions:
| 1. | In small bowl, combine peanut butter, soy sauce, garlic, brown sugar and lemon pepper. |
| 2. | Place pork tenderloins in resealable plastic bag; add peanut butter mixture. Seal to close; shake to coat meat evenly. Refrigerate 2 hours or overnight. |
| 3. | Preheat oven to 425F. Remove pork from plastic bag; discard marinade. Place tenderloins in roasting pan sprayed with nonstick cooking spray. Roast 25 minutes or until thermometer registers 160F. Let roast stand 5 minutes before slicing. Serve with couscous, if desired. Yield: 6 servings |
