Sweet & Sour Chuck Roast
Recipe Ingredients:
| 1/2 | tsp | salt |
| 1/2 | tsp | pepper |
| 1 | (3 lb) boneless chuck roast, trimmed | |
| 1 | Tbsp | vegetable oil |
| 2 | clove | garlic, minced |
| 2 | Tbsp | firmly packed dark brown sugar |
| 1 | cup | ketchup |
| 1 | bottle | (12oz) chili sauce |
| 1/4 | cup | red wine vinegar |
| 2 | medium | onions, thinly sliced |
Recipe Instructions:
| 1. | Sprinkle salt and pepper evenly over roast. Brown roast 2 minutes on each side in hot oil in a Dutch oven over medium-high heat. |
| 2. | Stir together garlic, sugar, ketchup, chili sauce and vinegar. Pour over roast. Add onions. |
| 3. | Bake, covered, at 350F for 2 1/2 to 3 hours or until tender and meat thermometer registers 160F. |
