Turkey Tenderloins & Apricot Sauce
Recipe Ingredients:
| 1 | pkg | (1 1/4 lb) turkey tenderloins (2 tenders) |
| 1/4 | tsp | each salt & freshly ground pepper |
| 2/3 | cup | apricot preserves |
| 2 | clove | garlic, minced |
| 2 | Tbsp | dijon mustard |
| 2 | Tbsp | reduced-sodium soy sauce |
Recipe Instructions:
| 1. | Preheat oven to 400F. You'll need a roasting pan lined with foil and coated with nonstick spray. |
| 2. | Season turkey tenderloins with salt and pepper; place in the prepared pan. |
| 3. | In a small bowl, combine remaining ingredients. Mix well; spoon some over turkey. Roast 35 to 40 minutes, basting frequently with the sauce, until an instant-read thermometer inserted into the thickest part registers at least 160F. |
| 4. | Let turkey rest for 10 minutes before cutting it crosswise into 1/2-inch-thick slices. Serves 4 |
