Ashley's Green Cookies
Recipe Ingredients:
| 1/3 | cup | powdered sugar |
| 1 | cup | butter or margarine, softened |
| 1 | tsp | vanilla extract |
| 3/4 | tsp | almond extract |
| 1 | pkg | (small) pistachio pudding mix |
| 1 | egg | |
| 2 | cup | unbleached flour |
| 1/2 | cup | chocolate chips |
| 1 1/2 | cup | powdered sugar (for filling) |
| 1 | to 3 tsp milk | |
| 3 | to 5 drops red or green food coloring |
Recipe Instructions:
| 1. | Preheat oven to 350F. In a large bowl, cream 1/3 cup powdered sugar, 1 cup butter, 1 tsp vanilla, almond extract, pudding mix and egg in your bowl until well blended. |
| 2. | Lightly spoon flour into measuring cup. By hand, bit by bit stir in flour and 1/2 cup of chocolate chips until well blended. |
| 3. | Shape into 1-inch balls and place 2 inches apart on lightly greased cookie sheet. With thumb make imprint in center of each cookie. Bake for 10 to 14 minutes until edges are light brown. Let cool completely. |
| 4. | In a smaller bowl combine all filling ingredients until smooth. Place a very scant tsp of this filling onto the center of each cookie. Makes 2 dozen. |
