Coconut Cake
Recipe Ingredients:
| 1 | pkg | white cake mix |
| 1 1/2 | cup | unsweetened coconut milk (or substitute mixture) |
| 4 | large | egg whites |
| 2 | can | coconut frosting |
| 1 1/2 | cup | sweetened coconut flakes |
| 1 1/2 | cup | water (coconut milk substitute) |
| 2 | Tbsp | oil (coconut milk substitute) |
| 1/2 | tsp | coconut extract (coconut milk substitute) |
Recipe Instructions:
| 1. | Preheat oven to 350F. Grease and flour three 8-inch cake pans. Blend cake mix, coconut milk, and egg whites - beat at low speed 30 seconds - then beat at medium speed 2 minutes. Pour into pans. |
| 2. | Bake at 350F for 18 to 21 minutes. Cool and frost cake. |
