Mini Fruit Desserts
Recipe Ingredients:
| 1 | pkg | (1/2oz) sugar-free gelatine |
| 7 | oz | fresh fruit, prepared & chopped |
| 6 | Tbsp | strained plain yogurt |
| 1 | tsp | vanilla extract |
| 3 | Tbsp | honey |
| 1/3 | cup | shelled pistachios, chopped |
Recipe Instructions:
| 1. | Make up the gelatine according to the package directions. |
| 2. | Divide the fruit (mangoes, bananas, peaches, strawberries, raspberries, blueberries) between 6 plastic cups or glasses. Pour over the gelatine and let chill for 6 hours until firmly set. |
| 3. | Mix the yogurt with the vanilla extract and honey and spoon over the jellies. Sprinkle with the nuts and serve. Yield: 6 servings. |
