Tropical Strawberry Cheesecake Coffeecake
Recipe Ingredients:
| 2 | pkg | (7oz) strawberry cheesecake muffin mix |
| 1/3 | cup | milk |
| 2 | eggs, lightly beaten | |
| 1 | can | (8oz) crushed pineapple in its own juice, undrained |
| 1/4 | tsp | coconut flavoring |
| 1/2 | cup | finely chopped macadamia nuts |
| 1 | cup | powdered sugar (for glaze) |
| 2 | Tbsp | milk (for glaze) |
| 1/4 | tsp | coconut flavoring (for glaze) |
Recipe Instructions:
| 1. | Heat oven to 350F. Grease 8-inch square cake pan. In mixing bowl, combine muffin mix, milk, eggs, pineapple and coconut extract. Stir just until blended. Pour into prepared pan. Sprinkle with macadamia nuts. Bake at 350F for 25 to 30 minutes or until golden brown. |
| 2. | In small bowl, combine all glaze ingredients; blend until smooth. Drizzle over warm cake. |
