Coconut Snowmen Cookies
Recipe Ingredients:
| 2 1/2 | cup | all purpose flour |
| 2 | tsp | baking powder |
| 1/4 | tsp | salt |
| 1/2 | cup | butter, softened |
| 1 | cup | granulated sugar |
| 2 | eggs | |
| 1 1/2 | tsp | vanilla |
| 3 1/2 | oz | can shredded coconut |
Recipe Instructions:
| 1. | Preheat oven to 375F. In a small bowl, stir together flour, baking powder, and salt. |
| 2. | In a large bowl, cream butter and sugar with a mixer until fluffy. Beat eggs into butter mixture a little at a time and mix well. Add flour mixture to butter mixture a little at a time and mix well. |
| 3. | Wrap dough in plastic and refrigerate for at least 30 minutes. Roll dough to 1/8-inch thickness and cut out cookies with snowmen shaped cookie cutter. |
| 4. | Place cookies on ungreased cookie sheets. Bake 7 to 10 minutes or until lightly browned. Let cool for 5 minutes and decorate with icing and shredded coconut. Makes 4 dozen cookies. |
