Roast Beef Crostini
Recipe Ingredients:
| 1 | Tbsp | butter or margarine |
| 2 | clove | garlic, minced |
| 1 | Tbsp | extra virgin olive oil |
| 1 | 7-inch French baguette, cut into 24 slices (1/4 inch each) | |
| 1/3 | cup | light peppercorn parmesan spreadable cheese* |
| 2 | medium | roma tomatoes, cut into 24 very thin slices |
| 1/4 | lbs | shaved roast beef, torn into 24 pieces |
| 1 | Tbsp | shredded parmesan or finely chopped parsley (optional) |
Recipe Instructions:
| 1. | Preheat oven to 375F. Combine butter and garlic in small microwave-safe bowl. Microwave at high power 12 to 20 seconds or until butter melts. Stir in olive oil. |
| 2. | Place baguette slices on broiler pan or rack (placing bread on rack in oven allows both sides to crisp slightly); brush with olive oil mixture. Bake 7 to 9 minutes or until lightly crisped. Do not overbake. Cool. |
| 3. | Spread each toast lightly with dip (about 1 tsp each). Top each with tomato slice. Pile roast beef evenly on toasts. Sprinkle lightly with parmesan or parsley, if desired. Yield: 24 servings *1/3 cup soft (from tub) light cream cheese with 1 Tbsp shredded parmesan and 1/4 to 1/2 tsp coarse ground pepper can be substituted. |
