Apple and Potato Gratin
Recipe Ingredients:
| 1 | tsp | unsalted butter |
| 4 | cup | heavy cream |
| 6 | large | egg yolks |
| 1 | tsp | salt |
| 1/2 | tsp | freshly ground white pepper |
| 1/2 | tsp | rub or Emeril's essence |
| 2 | lbs | red bliss potatoes, peeled & very thinly sliced |
| 2 | cup | grated gruyere (about 8oz) |
| 2 | lbs | rome or wine sap apples, peeled, cored and very thinly sliced |
| 1/8 | tsp | nutmeg |
Recipe Instructions:
| 1. | Preheat the oven to 400 degrees. Grease a 9X13 inch-baking dish with the butter. |
| 2. | Whisk the cream, egg yolks, ½ teaspoon of salt, ¼ teaspoon of pepper and Rub or Essence in a mixing bowl. |
| 3. | Layer one-third of the potatoes evenly in the bottom of the baking dish. Season lightly with the remaining salt and pepper. Sprinkle the cheese over the potatoes. Layer half of the apples over the cheese and add 1/8 teaspoon of nutmeg. Pour 1 cup of the cream mixture over the apples. Spread another layer of the potatoes over the apples and firmly press down the layers. Layer the remaining apples and potatoes. Pour the remaining cream mixture over all. |
| 4. | Cover the pan with foil and bake for 30 minutes. Remove the foil and continue to cook until the potatoes are tender and the top is bubbly and golden brown – 25 to 35 minutes. Let stand for 10 minutes before serving. |
