Ham and Cheese Stuffed Potatoes
Recipe Ingredients:
| 4 | large | potatoes |
| 1/2 | cup | milk |
| 1 | pkg | (3oz) cream cheese, softened |
| 2 | Tbsp | butter or margarine |
| 1/2 | cup | shredded swiss cheese |
| 1/2 | cup | shredded cheddar cheese |
| 1/2 | to 1 tsp salt | |
| 1/2 | tsp | pepper |
| 1 | cup | cooked diced ham |
| 2 | tsp | chopped fresh chives |
Recipe Instructions:
| 1. | Place potatoes in a lightly greased aluminum foil-lined 15x10-inch jelly roll pan. Bake at 400F for 1 hour or until tender; cool 30 minutes. |
| 2. | Cut each potato in half lengthwise; carefully scoop out pulp into a large bowl, leaving a 1/4-inch-thick shell. |
| 3. | Beat pulp, milk, cream cheese, butter, swiss cheese, cheddar cheese, salt, and pepper at medium speed with an electric mixer until blended; stir in ham and chives. Spoon mixture into potato shells. |
| 4. | Bake at 350F for 15 minutes. |
