Quick & Easy Crab Cakes
Recipe Ingredients:
| 1 | cup | boiling water |
| 1 | pkg | (6oz) Stove Top cornbread stuffing mix |
| 3 | eggs, lightly beaten | |
| 2 | can | (6oz) crabmeat, drained & flaked |
| 1/4 | cup | (1/2 stick) butter or margarine |
| 1 | lemon, cut into 6 wedges |
Recipe Instructions:
| 1. | Add boiling water to stuffing mix; stir just until moistened. Let stand 5 minutes. |
| 2. | Mix eggs & crabmeat in large bowl. Add prepared stuffing; mix well. Shape into 6 patties. |
| 3. | Cook patties in melted butter in large skillet on medium heat for 5 minutes on each side or until heated through and lightly browned on both sides. Serve with lemon wedges. Makes 6 servings. |
