Beer Battered Fish
Recipe Ingredients:
| 2 | cup | flour |
| 2 | limes | |
| 1/2 | gal | ice water |
| 2 | Tbsp | everglades seasoning |
| 2 | lbs | fish fillets (catfish works well) |
| 2 | pkg | Martha White Flap-Stax pancake mix |
| 2 | can | beer (cold) |
| 2 | Tbsp | tabasco sauce |
| 1 | cup | cornstarch |
| 1/4 | cup | kosher salt (iodized leaves fish bitter) |
| peanut oil for frying |
Recipe Instructions:
| 1. | Dissolve salt in water and soak fillets for ½ hour. Drain, rinse, pat dry with paper towel and cut into pieces. Sprinkle with limejuice and refrigerate for 2 hours. |
| 2. | Mix pancake batter with beer and Tabasco sauce. Place in freezer for ½ hour. (The last half hour of the step above). |
| 3. | Heat oil; mix flour and cornstarch in a large zip-lock bag with everglades seasoning. Put fish in bag and shake to coat fish. Dip fish in batter and let drip some. Fry until golden brown. |
