Stuffed Flank Steak
Recipe Ingredients:
| 5 | Tbsp | olive oil, divided |
| 1 | small | onion, chopped |
| 2 | clove | garlic, minced, divided |
| 1 | can | (28oz) crushed tomatoes |
| 2 | Tbsp | tomato paste |
| 1 | tsp | sugar |
| 1/4 | tsp | red pepper flakes |
| 1/3 | cup | chopped fresh basil leaves |
| 1/4 | cup | Italian bread crumbs |
| 1/4 | cup | grated Romano cheese |
| 1 | Tbsp | chopped FRESH parsley |
| 1 | Tbsp | chopped fresh basil |
| 1 1/2 | lbs | flank steak |
Recipe Instructions:
| 1. | Heat 2 Tbsp oil in a large nonstick skillet; add onion and one clove garlic. Cook and stir 5 minutes or until tender. Reduce heat to low. Add tomatoes, tomato paste, sugar, and red pepper flakes; cover and simmer 30 minutes. Add 1/3 cup basil; simmer 5 minutes more. |
| 2. | Meanwhile, combine bread crumbs, cheese, parsley, one Tbsp basil, and remaining 1 clove garlic in a medium bowl; stir in one Tbsp oil. Preheat oven to 450F. |
| 3. | Place flank steak in a large baking dish. Sprinkle bread crumb mixture evenly over the steak to cover the top evenly. Starting at the short end, roll up steak, and tie tightly with food-grade string to secure the steak roll. Season with salt and pepper to taste. |
| 4. | Heat remaining 2 Tbl oil in a large nonstick skillet over medium-high heat; cook meat 5 minutes on each side, turning occasionally. Place on a baking sheet; bake 15 to 20 minutes or until desired degree of doneness. Remove twine and slice evenly. Spoon sauce evenly over steak slices. |
