Ultimate Vegetable Beef Stew
Recipe Ingredients:
| 1 1/2 | lbs | beef stew meat |
| 5 | Tbsp | all-purpose flour, divided |
| 3 | Tbsp | vegetable oil |
| 2 | clove | garlic, minced |
| 4 | cup | beef broth |
| 1/4 | cup | tomato paste |
| 1 | yellow onion, chopped | |
| 1/2 | pkg | (16oz) baby carrots |
| 1 | pkg | (4oz) fresh shiitake mushrooms |
| 2 | Tbsp | chopped fresh thyme |
Recipe Instructions:
| 1. | Toss beef cubes with flour. Season to taste with salt and pepper. |
| 2. | Heat oil over medium heat in dutch oven. Add meat and brown on all sides; drain off fat. |
| 3. | Add garlic, broth, and tomato paste. Bring to boiling; cover and simmer 1 to 1 1/2 hours. |
| 4. | Add onion, carrots, mushrooms, and thyme; season to taste with additional salt and pepper. Cover and simmer 30 minutes or until vegetables are tender. Yield: 4 servings |
