Mandarin Salad Pizza
Recipe Ingredients:
| 1 | pkg | (10oz) refrigerated pizza crust |
| 1 | pkg | (8oz) cream cheese, softened |
| 1/2 | tsp | soy sauce |
| 1 | medium | pressed garlic clove |
| 1 | 1/2-inch piece pressed ginger root or 1/4 tsp ground ginger | |
| 1/2 | cup | spinach leaves, stems removed |
| 1/2 | cup | water chestnuts |
| 2 | can | (8oz each) crushed pineapple |
| 1 | can | (11oz) mandarin orange segments |
| 1 | small | carrot |
Recipe Instructions:
| 1. | Preheat oven to 425F. Evenly roll out dough into a 12-inch circle on pizza pan or baking stone. Bake 10 minutes. Cool completely. |
| 2. | Combine cream cheese, soy sauce, pressed garlic, and ginger in bowl. Spread mixture onto cooled crust. |
| 3. | Layer several spinach leaves together on cutting board and roll into a cylinder. Thinly slice into shreds. Rinse and drain spinach leaves in colander. Arrange spinach shreds over cream cheese mixture. |
| 4. | Drain water chestnuts, pineapple, and mandarin oranges in colander. Chop water chestnuts. Place water chestnuts, pineapple, and mandarin oranges over spinach. |
| 5. | Peel carrot. Zest carrot using lemon zester/scorer; sprinkle over top of pizza. Cut using pizza roller; serve with spatula. Yield: 10 servings |
