Uchidadi (filling)
Recipe Ingredients:
| 3 | box | (15oz) white raisins |
| 2 | pkg | (12oz) or one 24oz box black raisins |
| 1 | string of figs | |
| 3 | lbs | shelled walnuts (in one pound bags or 4- 12oz containers) |
| 1/4 | cup | grated dried orange peel (1 orange) |
| 1 | Tbsp | cinnamon |
| 1 | Tbsp | cloves |
| 1 | Tbsp | nutmeg |
| 1 | Tbsp | ginger |
| 1 | Tbsp | black pepper |
Recipe Instructions:
| 1. | Use food processor to chops nuts. Set aside. |
| 2. | Cut off tips of figs and cut each fig in quarters. Pass all figs and raisins through the meat grinder two times using the large whole disk. |
| 3. | Add orange peel and spices into figs and raisins. Add water and mix well using fingers. |
| 4. | Add chopped nuts, adding water a little at a time keeping a medium soft consistency. LAY ASIDE (see Uchidadi (dough) recipe next) |
