Veal Parmesan
Recipe Ingredients:
| 1 | lbs | veal cutlets, cut to about 1/2 inch thick |
| 1 1/3 | cup | unseasoned breadcrumbs |
| 1/3 | cup | parmesan-reggiano cheese, grated |
| 3 | eggs, well beaten | |
| little bit of half & half | ||
| 1/4 | tsp | fresh ground pepper |
| 3 | Tbsp | olive oil |
| marinara sauce (see Marinara Sauce recipe) | ||
| grated mozzarella cheese |
Recipe Instructions:
| 1. | Pound cutlets to about 1/8 inch thick using a mallet with the cutlets in between 2 sheets of plastic wrap. Cut the cutlets into about 3 inch by 3 inch pieces. |
| 2. | Prepare a bowl with the breadcrumbs and Parmesan cheese. Prepare another bowl with the well beaten eggs, half & half and pepper. Dip the cutlets into the egg mixture and then into the crumb mixture. |
| 3. | Pour 3 tablespoons of olive oil into a skillet set to medium heat (#5). Add cutlets to the skillet and slowly brown on both sides (about 1 – 2 minutes per side). Remove and dry on paper towels. |
| 4. | Arrange cutlets into 11 x7 baking dish. Pour Marinara sauce over cutlets. Top with grated mozzarella and Parmesan cheese. Bake at 350 degrees for 15 to 20 minutes or until cheese is melted. |
