Crab Balls
Recipe Ingredients:
| 2 | tsp | tabasco sauce |
| peanut oil for frying | ||
| 1 | egg, well beaten | |
| 1 | lbs | crab meat |
| 1 | stick margarine, melted | |
| 1/2 | cup | mayonnaise |
| 1/2 | cup | celery, finely chopped |
| 1/2 | cup | green onion, minced |
| 1/2 | cup | red or green bell pepper, minced |
| 1 | tsp | everglade seasoning |
| 2 | Tbsp | fresh parsley, minced |
| Italian bread crumbs for coating | ||
| 1 | pkg | saltine crackers (from large box) |
Recipe Instructions:
| 1. | Mash crackers in a large zip lock bag with a rolling pin. Add onion, celery, pepper, Everglades Seasoning and crabmeat. Mix in margarine, mayonnaise and Tabasco Sauce. Shake up mix well in the zip lock bag. |
| 2. | Roll into small balls about ½ the size of meatballs. Coat with breadcrumbs and fry in oil until golden brown. Note: Any type of fresh steamed fish can be substituted for crabmeat. |
