Mojo Seafood Skewers
Serve with black beans heated with a little sliced garlic and olive oil.Recipe Ingredients:
| 1/3 | cup | Mojo Criollo marinade (Goya) |
| 1/3 | cup | orange juice |
| 1/3 | cup | chopped cilantro |
| 16 | peeled and deveined jumbo shrimp (about 1 lb) | |
| 8 | large | sea scallops (about 8 oz), halved crosswise |
| 1 | small | cubanelle pepper, cut into 16 pieces |
| nonstick cooking spray |
Recipe Instructions:
| 1. | In a bowl, mix marinade, orange juice and cilantro; reserve 2 Tbsp. Add shrimp, scallops and peppers to bowl; toss to coat. Let stand 10 minutes. |
| 2. | Coat outdoor grill rack with nonstick spray; heat grill. You'll need 8 metal skewers. If using wooden, soak in water for 10 minutes to prevent burning. |
| 3. | Thread shrimp, scallops and peppers alternately on skewers. Discard marinade in bowl. Grill 3 to 4 minutes, turning once, until seafood is just barely opaque at centers. |
| 4. | Remove to serving plates and drizzle with reserved 2 Tbsp marinade mixture. Serves 4 |
