Black-Eyed Peas
Recipe Ingredients:
| 2 | lbs | bag (32oz) uncooked black-eyed peas |
| 3 | to 5 cloves garlic, minced | |
| 1 | large | onion, minced |
| 1 | green pepper, minced | |
| 2 | tsp | salt |
| 1 | tsp | pepper |
| 2 | tsp | rub or Emeril's essence |
| 1 | pkg | smoked pork jowl, scored |
| 2 | slices bacon, diced |
Recipe Instructions:
| 1. | Pour peas into a bowl and fill with water. Get rid of floaters and any bad peas. Soak overnight. Pour peas in colander and rinse. |
| 2. | Finely chop the 3-5 cloves, onion and green pepper. |
| 3. | Add diced bacon to Dutch oven and cook for 5 minutes at medium heat (#5). Lower heat to #3 and add onions, garlic and green peppers. Cook for 5 minutes. |
| 4. | Score the pork jowl and add to Dutch oven. Add black-eyed peas and cover with water. Add 2-teaspoon salt, 1-teaspoon pepper, and 2-teaspoon rub. Cook in Dutch oven for 4 -6 hours on low heat (#1). |
